Cole Cooks: Instant Pot Black Bean Soup
The Instant Pot is perfect for making soup. This is my recipe for Instant Pot Black Bean Soup. It contains ham but can easily be adopted to make a vegetarian version.

Black bean soup is incredibly easy to make and takes a little over an hour. The prep time is only about 10 minutes, the rest is all about letting the Instant Pot do its work.
This recipe is a slight variation of Instant Pot Cuban Black Beans. The main difference is you double the amount of liquid. We use chicken broth but a vegetable broth can be substituted for a vegetarian version.
The vegetarian version would also leave out the ham. My favorite ham is country ham we get from Virginia. I cook an entire ham and save small portions in the freezer to use in soup and other dishes.
The other key technique is pureeing some of the beans. Many recipes call for using an immersion blender to puree the entire soup. However, I like to only puree about half the beans and leave the other half whole.
After cooking remove a portion of the beans to a blender along with some liquid. Puree the beans and add the mixture back to the soup. We use our Nutri Ninja blender for this. Of course, if you wanted to puree the entire soup you can use an immersion blender.
Instant Pot Black Bean Soup is a great weeknight meal. It works on its own as a satisfying meal. It is a favorite recipe when we are not looking for a heavy dinner.

Instant Pot Black Bean Soup
Ingredients
- 1 pound dried black beans
- 4 ounces ham diced
- 1 tablespoon vegetable oil
- 1 onion diced
- 1 red yellow or orange bell pepper, diced
- 6 cloves garlic minced
- 1 teaspoon kosher salt
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 tablespoon cider vinegar
- 1 bay leaf
- 6 cups chicken broth
Instructions
- Set Instant Pot to Sauté. Add oil to Instant Pot and let heat for one minute. Add onion, pepper, garlic, salt, cumin and coriander. Sauté for 3 to 5 minutes. Add beans, vinegar, bay leaf, chicken broth and ham.
- Set Instant Pot on high pressure for 40 minutes. After the 40 minutes, allow Instant Pot to natural release for 20 minutes.
- Add about 2 cups of beans to blender along with about 1 cup water. Puree beans and add back to pot. Serve
