Cole Cooks: Instant Pot Cuban Black Beans
Cuban black beans make a great side dish for almost any meal. In the Instant Pot these beans can be made in a little over an hour.

Cuban black beans have lots of flavor because they add peppers, onions, and garlic to the mix. Of course, you could buy a can of black beans and mix in the ingredients. However, with the Instant Pot dried beans are extremely easy. There is no need to pre-soak the beans. Instead you add them directly to the Instant Pot.
A key ingredient in our Cuban Black Bean recipe is pork. Ideally I like to add diced Virginia country ham to the beans. However, this is rare in many parts of the world. Bacon, regular ham or a ham hock is a fine substitute.
Of course, this makes it non-vegetarian. To make a vegetarian version simply omit the pork and substitute vegetable broth for chicken broth.
Preparing the beans only takes about 10 minutes. They need a little over an hour to cook in the Instant Pot.
Most recently we made the beans in conjunction with our Cuban Ropa Vieja. This presents a challenge because the Ropa Vieja used the Instant Pot. My solution was to cook the Cuban black beans first. I removed them from the Instant Pot and let them simmer on low heat while the Ropa Vieja cooked.
The beans taste great the next day and actually improve in flavor. Cooking the Cuban black beans, refrigerating them and serving the next day is another option.

Instant Pot Cuban Black Beans
Ingredients
- 1 pound dried black beans
- 3 slices bacon or 4 ounces ham diced
- 1 tablespoon vegetable oil
- 1 onion diced
- 1 red yellow or orange bell pepper, diced
- 6 cloves garlic minced
- 1 teaspoon kosher salt
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 tablespoon cider vinegar
- 1 bay leaf
- 3 cups chicken broth
- 1 jalapeno pepper seeded and diced
Instructions
- Rinse and drain black beans
- Set Instant Pot to Sauté. If using bacon add and brown. Set aside bacon.
- Add oil to Instant Pot. Add onion , pepper, garlic, salt, cumin and coriander. Sauté for 3 to 5 minutes. Add beans, vinegar, bay leaf, bacon/ham, chicken broth and optional jalapeno pepper..
- Set Instant Pot on high pressure for 40 minutes. After the 40 minutes, allow Instant Pot to natural release for 20 minutes. Serve.
