Instant Pot Cuban Black Beans
These delicious Cuban black beans use the Instant Pot to bring dried beans to full flavor in little over an hour.

- 1 pound dried black beans
- 3 slices bacon or 4 ounces ham diced
- 1 tablespoon vegetable oil
- 1 onion diced
- 1 red yellow or orange bell pepper, diced
- 6 cloves garlic minced
- 1 teaspoon kosher salt
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 tablespoon cider vinegar
- 1 bay leaf
- 3 cups chicken broth
- 1 jalapeno pepper seeded and diced
Rinse and drain black beans
Set Instant Pot to Sauté. If using bacon add and brown. Set aside bacon.
Add oil to Instant Pot. Add onion , pepper, garlic, salt, cumin and coriander. Sauté for 3 to 5 minutes. Add beans, vinegar, bay leaf, bacon/ham, chicken broth and optional jalapeno pepper..
Set Instant Pot on high pressure for 40 minutes. After the 40 minutes, allow Instant Pot to natural release for 20 minutes. Serve.
