Instant Pot Ropa Vieja
This is a version of Ropa Vieja the national dish of Cuba. Using an Instant Pot drastically reduces cooking time. Our recipe adds an optional spicy component to make it a hybrid Cuban/Jamaican dish

- 2 pounds chuck roast cut in thirds
- 1 tablespoon vegetable oil
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 onion thinly sliced
- 2 red, orange or yellow bell peppers thinly sliced
- 7 cloves garlic minced
- 1 14.5 ounce can diced tomatoes
- 1 cup chicken broth
- 1 teaspoon dried oregano
- 2 teaspoon ground cumin
- ¼ cup red wine vinegar
- 1 bay leave
- 2 tablespoon capers
- ½ cup sliced green olives
- 2 habanero peppers seeded and sliced (optional)
Set Instant Pot to Sauté and add oil. Season beef with salt and pepper. Brown beef on all sides. Remove beef and set aside
Add onions and peppers and sauté for about 3 minutes. Add garlic and sauté for an additional minute. Add remaining ingredients including beef.
Set Instant Pot to cook on high pressure for 40 minutes. After 40 minutes let Instant Pot natural release for 20 minutes.
Remove beef and shred. Return shredded beef to pot. Serve with rice and beans.
