Instant Pot Black Bean Soup

This is an Instant Pot Black Bean Soup that can be prepared in about 10 minutes plus an hour of cooking.

Ingredients
  

  • 1 pound dried black beans
  • 4 ounces ham diced
  • 1 tablespoon vegetable oil
  • 1 onion diced
  • 1 red yellow or orange bell pepper, diced
  • 6 cloves garlic minced
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 tablespoon cider vinegar
  • 1 bay leaf
  • 6 cups chicken broth

Instructions
 

  • Set Instant Pot to Sauté. Add oil to Instant Pot and let heat for one minute. Add onion, pepper, garlic, salt, cumin and coriander. Sauté for 3 to 5 minutes. Add beans, vinegar, bay leaf, chicken broth and ham.
  • Set Instant Pot on high pressure for 40 minutes. After the 40 minutes, allow Instant Pot to natural release for 20 minutes.
  • Add about 2 cups of beans to blender along with about 1 cup water. Puree beans and add back to pot. Serve
