Instant Pot Potato Goulash with Sausage
This is a version of Erdäpfelgulasch. a potato goulash popular in Austria. Using the Instant Pot it is an easy weeknight meal. It can be done as a vegetarian dish with the option to add sausage.

- 3 pounds yellow potatoes cut in 1-inch cubes
- 1 onion sliced
- 2 red peppers sliced
- 3 cloves garlic minced
- 12 ounce pearl onions
- 12- ounce cooked sausage link sliced into ¼ inch rounds (optional)
- 4 tablespoons Hungarian Paprika
- 2 teaspoon whole caraway seeds
- 1 teaspoon coriander ground
- 2 bay leaves
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 4 cups stock vegetable, chicken or beef
- 2 tablespoons vinegar
Heat Instant Pot on sauté. Add onions and red pepper. Sauté until soft, about 5 minutes. Add minced garlic and sauté for another minute.
Add remaining ingredients. Set Instant Pot on high pressure for 5 minutes. Allow to natural release for 5 minutes and then manual release.
