Instant Pot Potato Goulash with Sausage

This is a version of Erdäpfelgulasch. a potato goulash popular in Austria. Using the Instant Pot it is an easy weeknight meal. It can be done as a vegetarian dish with the option to add sausage.

Ingredients
  

  • 3 pounds yellow potatoes cut in 1-inch cubes
  • 1 onion sliced
  • 2 red peppers sliced
  • 3 cloves garlic minced
  • 12 ounce pearl onions
  • 12- ounce cooked sausage link sliced into ¼ inch rounds (optional)
  • 4 tablespoons Hungarian Paprika
  • 2 teaspoon whole caraway seeds
  • 1 teaspoon coriander ground
  • 2 bay leaves
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 4 cups stock vegetable, chicken or beef
  • 2 tablespoons vinegar

Instructions
 

  • Heat Instant Pot on sauté. Add onions and red pepper. Sauté until soft, about 5 minutes. Add minced garlic and sauté for another minute.
  • Add remaining ingredients. Set Instant Pot on high pressure for 5 minutes. Allow to natural release for 5 minutes and then manual release.
