Sous Vide Flat Iron Steak
If properly prepared flat iron steak is a tender and flavorful cut of meat. This recipe features a grapefruit marinade and cooking in sous vide before finishing on the grill.

- 4 flat iron steaks about 6 ounces each
- 1/3 cup grapefruit juice
- 1/3 cup olive oil
- 2 Tbsp lemon juice
- 1 Tbsp soy sauce
- 1 Tbsp ginger minced
- 1 Tbsp garlic minced
- 1 Tbsp brown sugar
- 1 Tbsp kosher salt
- 1 tsp black pepper
Combine marinade ingredients in a bowl. Add steak, cover and marinate steaks in refrigerator for an hour.
Heat sous vide bath to 125 degrees for medium rare, 130 for medium or 135 for medium-well done. Add steak and cook at least 1 hour, but no more than 4 hours.
Heat grill or skillet to high. Remove steaks from sous vide bath and pat dry. Sear steaks on grill for about 2 minutes per side. Slice steaks across grain to serve.
