Lemon Glazed Salmon

This combination of sweet, savory and sour flavors match perfectly with rich buttery broiled salmon.

- 4- 5 oz. portions of salmon fillets
- I/2 cup fresh squeezed lemon juice
- 1/4 cup of melted butter
- 2 Tb. of grated yellow onion
- 1 Tb. of honey
- 1 tsp. minced fresh dill
- 1/2 tsp. garlic powder
- 1/2 tsp. fresh ground black pepper
- 1 Tb. of canola oil
In a medium size mixing bowl, gently whisk together melted butter, honey, lemon juice, grated onion, dill, garlic powder and black pepper.
Pre-heat your broiler on high with the oven rack about 6 inches from the heat source.
Salt and pepper each side of the salmon fillets. Using a cast iron or oven safe skillet, coat the pan with canola oil. Lay each fillet in the cold skillet and heat on high for 2 minuets.
Turn off the heat on the stove and brush the lemon glaze on the top of each salmon fillet with a pastry brush or spoon.
Transfer skillet with glazed salmon to the broiler. Cook under the broiler heat for a total of 5-6 minuets, periodically moving the skillet to make sure each filet gets a little caramelized around the edges.
Serve with extra lemon slices.
