Pesto Sauce
This is a classic pine nut based pesto sauce

- 4 cups basil leaves
- ½ cup pine nuts
- 3 cloves garlic minced
- ½ cup freshly grated Parmesan Romano or Pecorino cheese
- 2/3 cup extra-virgin olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
Heat oven to 350 degrees. Place pine nuts on baking sheet and toast until golden brown, about 3-5 minutes.
Add pine nuts, cheese, basil, garlic, salt and pepper to food processor and blend.
With the food processor on low slowly add the olive oil until fully blended.
To freeze, place in freezer proof container and top with a layer of olive oil. When using thaw and incorporate olive oil.
