Instant Pot Beef Barley Stew

This Instant Pot Beef Barley stew can be ready in little over an hour.

Ingredients
  

  • 2 tablespoons cooking oil
  • 2 pounds chuck roast cut into 1-inch chunks
  • 4 cups beef broth
  • 1 onion diced
  • 3 stalks celery chopped
  • 3 carrots chopped
  • 4 cloves garlic minced
  • 1 pound potatoes cubed
  • 1 cup barley
  • 1 bay leaf
  • 2 teaspoon Worcestershire sauce
  • ½ teaspoon rosemary
  • ½ teaspoon thyme
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper

Instructions
 

  • Set Instant Pot to sauté.  Heat oil.  Add beef and brown on all sides.
  • Add onion, carrots, celery and garlic and sauté for about 3 minutes.
  • Add remaining ingredients and stir to combine.
  • Set Instant Pot on high pressure for 25 minutes.  Let pressure naturally release for at least 15 minutes.
