There are several different kinds of pizza we make. For something like our Detroit style pizza, we use a no-cook tomato sauce. Basically, this is a sauce where you stir together the ingredients and put it on the pizza dough uncooked. We also use this on our famous grilled pizza.
In contrast, this is a cooked sauce that simmers for an hour. We use this sauce on our NY-style pizza. This was inspired by the book American Pie by Peter Reinhart. Our NY-style pizza dough follows his recipe exactly. Our sauce recipe is similar but contains some enhancements we have developed over the years.
Be sure and check out our recipe for making the dough. For a full pizza-making guide see 12-year old Grady’s article.
This is a simple recipe where you simply combine the ingredients and simmer in a saucepan. We use San Marzano tomatoes. However, in our taste test, we couldn’t really tell the difference.
