One of the great recipes on the Big Green Egg is smoked turkey.  We have learned to combine Big Green Egg cooking with sous vide.  This works great for poultry which is easy to overcook.  This is our Big Green Egg Sous Vide Turkey Breast method.

The beauty of sous vide cooking is that you can get meat to exactly the right temperature.  This is especially important for poultry that is easy to overcook.  With sous vide you can cook poultry to a lower temperature and not worry about bacteria.

As this Serious Eats article describes, bacteria is killed when it as held at a certain temperature for a certain period of time.  With poultry, as long as it is held at 140 degrees for 30 minutes it will kill the bacteria.

In a traditional oven, holding meat at that low temperature for a long period of time is nearly impossible.  It is recommended that poultry be cooked to 165 degrees because at that temperature bacteria is killed in 10 seconds.  However, with sous vide you can hold it at a low temperature for a long period of time.  This kills the bacteria without over cooking the meat.

The Big Green Egg has the same issues of all ovens and grills.  You have to worry about overcooking.  The chef needs to hover over the meat during the last part of cooking.  Otherwise, the temperature will shoot to dry and tough.

With sous vide you cook the meat to 140 degrees.  We usually do this overnight with a frozen breast.

The next day the turkey breast will come out of the sous vide bath looking pretty pale.  Here is where the Big Green Egg comes in.

You simply heat the Big Green Egg and add wood chips.  The turkey breast only goes on for about 5 minutes to get a nice sear and a mild smoke flavor.

In our family a mild smoke flavor is a plus because several members do not like a strong smoke flavor.  A fully smoked turkey on the Big Green Egg comes out too strong.  Our sous vide method turns out to be a nice compromise.

We have only tried this method for a turkey breast, not a full turkey.  When we do full turkeys at Thanksgiving, we have smoked one on the Big Green Egg and done another the traditional oven way.  This gives people the option of regular or smoked turkey.

Our Big Green Egg Sous Vide Turkey Breast is perfect for when we want turkey in the off-season.  It is incredibly simple and makes a wonderful summertime meal.

Of course, you may want to try it with our mashed potatoes.

This is a method for using sous vide and getting a smoked turkey flavor by finishing on the Big Green Egg

Ingredients
  

  • 1 bone-in turkey breast 4 to 5 pounds
  • 4 teaspoon salt
  • 2 teaspoon pepper
  • Wood chips cherry or hickory

Instructions
 

  • Set sous vide water bath to 140 degrees. Season turkey breast with salt and pepper. Add to sous vide bag and set in sous vide. Let cook overnight or for at least 5 hours.
  • Heat Big Green Egg to 425 degrees. Add wood chips. When chips starts to smoke place turkey breast on grill. Cook for about 5 minutes until skin is crispy.
