Instant Pot Italian Bean Soup

Soaking Beans
- 1 pound Great Northern beans
- 6 cups water
- 2 teaspoon salt
Soup
- 2 tablespoons olive oil
- 1 onion diced
- 2 carrots diced
- 2 stalks celery diced
- 4 cloves garlic minced
- 5 cups chicken stock
- 1 tablespoon apple cider vinegar
- 2 bay leaves
- 1 15 ounce can diced tomato
- 1 teaspoon red pepper flake
- 1 teaspoon oregano
- 1 teaspoon thyme
- ½ teaspoon black pepper
- 3 links Italian sausage crumbled (about 1 pound)
- One bundle kale chopped
Instructions
- Add 6 cups water, salt and beans to Instant Pot. Pressure cook on high for 30 minutes. Let natural release for 15 minutes and then manually release. Drain and set aside.
- Set Instant Pot to sauté and add oil. Add sausage and start browning. Add onion, carrots, celery and garlic. Cook until softened about 5 minutes. Add drained beans to Instant Pot. Add remaining ingredients.
- Cook on high pressure for 10 minutes and manually release. Adjust for salt to taste.

Which Instant Pot to Buy
There are quite a few variations on the Instant Pot. Our recommendation is to keep it simple and buy the basic 6-quart version. This is what we own and we do not use all the features. More expensive versions have additional functions, but we like to keep it basic. Our version was $100 but we can usually find it for about $70.
Normally dried beans require a long period of soaking. This makes it difficult when you want to serve a last-minute meal. The beauty of the Instant Pot is you can have dried beans ready to go in under an hour.
We have done quite a few types of beans in our Instant Pot. For example, we serve instant pot refried beans with our Mexican meals.
One of our favorites is our Instant Pot Italian White Bean Soup. This hearty soup features beans with sausage and kale. It is a complete meal and the entire process takes a little over an hour, most of it hands off.
This is a healthy meal that is easy to prepare and inexpensive. The cost of ingredients is well under $10 for a soup that can serve 6 to 8 people.
For the sausage we remove them from the casing and crumble them in the Instant Pot to brown.
We buy Italian sausage from our butcher for about $2 a pound. Three links of sausage weigh about one pound. We use 2 mild Italian sausages and one spicy Italian sausage.
Of course if you want a vegetarian version you could simply leave out the sausage and replace the chicken broth with vegetable broth.
Our version of Instant Pot Italian White Bean Soup is fairly thick, more like a stew. If you wanted to make a soupier version you can add more water or stock. This could be done either before or after it cooks under pressure. If you do it after simply let it simmer for a few minutes.
I have no idea if this soup is authentic to what is served in Italy. I do know it is similar to Ribollita, an Italian soup made with leftover minestrone and bread. (Serious Eats has a complete recipe for Ribollita). We call it Italian because it is similar to the type of white bean soups you would find in Italy.
