Instant Pot Italian Bean Soup

This is an Instant Pot Italian Bean Soup that features sausage and kale. This is a low-cost nutritional soup that provides a full meal. Even with dried beans it can be made in an hour.

Ingredients
  

Soaking Beans

  • 1 pound Great Northern beans
  • 6 cups water
  • 2 teaspoon salt

Soup

  • 2 tablespoons olive oil
  • 1 onion diced
  • 2 carrots diced
  • 2 stalks celery diced
  • 4 cloves garlic minced
  • 5 cups chicken stock
  • 1 tablespoon apple cider vinegar
  • 2 bay leaves
  • 1 15 ounce can diced tomato
  • 1 teaspoon red pepper flake
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • ½ teaspoon black pepper
  • 3 links Italian sausage crumbled (about 1 pound)
  • One bundle kale chopped

Instructions
 

  • Add 6 cups water, salt and beans to Instant Pot. Pressure cook on high for 30 minutes. Let natural release for 15 minutes and then manually release. Drain and set aside.
  • Set Instant Pot to sauté and add oil. Add sausage and start browning. Add onion, carrots, celery and garlic. Cook until softened about 5 minutes. Add drained beans to Instant Pot. Add remaining ingredients.
  • Cook on high pressure for 10 minutes and manually release. Adjust for salt to taste.

Notes

You can substitute vegetable stock and eliminate sausage for a vegetarian version. While beans are cooking you can sauté sausage and vegetables on the stovetop to save time. To make a soupier version add more water or stock before or after pressure cooking.
