Sous vide is a cooking technique that has hit the mainstream in recent years.  We love this technique because it allows you to perfectly cook meat.  This is our regularly updated list of our top sous vide recipes.

The first thing to note is that sous vide is mainly a technique for cooking meat to the exact temperature you would would like to serve it.  Thus it is a method that can be adjusted to almost any recipe calling for meat cooked to a certain temperature.

Our top 10 recipes are designed to provide inspiration for people to think outside the box.  In some cases, we have provided recipes that call for finishing on our Big Green Egg smoker.  This is a perfect use of sous vide because you can rest assured you won’t overcook the meat but still have that smoke flavor.

In sous vide you heat food in a water bath to the exact temperature you want that food to reach.  So if you want to serve a medium rare steak at 130 degrees you heat the water to that temperature and the steak will cook exactly to 130.

Rib-Eye Steak

Cooking a perfect steak was why we bought a sous vide cooker.  This is a basic recipe we use over-and-over.

My kids loved this recipe.  I taught my son how to do use the sous vide machine.  The basic idea works for almost any chicken dish.

Chicken is perfect for sous vide because you don’t have to worry about it becoming overcooked and dry.  This recipe works for all kinds of chicken dishes.

Sous Vide Smoked Turkey Breast

Turkey can easily overcook.  We also have found that the smoke flavor can get overwhelming for many people.  This method controls the amount of smoke and make sure the bird is perfectly cooked.

Sous Vide Pork Chop with Coffee and Molasses

Pork chops cooked sous vide are a revelation. You can safely cook them to a much temperature.  The result is a juicy, flavorful chop that is unlike what I remember from my childhood.  This recipe uses a coffee molasses brine and rub but works with almost any pork chop recipe.

Sous Vide North Carolina Pulled Pork

Our primary method for cooking pulled pork is on a Big Green Egg.  However, that can be a project.  We found this sous vide short cut from some of our North Carolina friends.

Sous Video Pork Carnitas

Pork carnitas is a classic Mexican dish.  It is similar to North Carolina pulled pork.  Sous vide allows you to get tender pork by doing a longer cook at a lower temperature.

Sous Vide Habanero Chicken

This recipe uses 8 to 12 habanero peppers.  However, soaking them in vodka allows the heat to be tamed while retaining the flavor of the pepper.
