Cole Cooks: Sous Vide Flat Iron Steak
Flat iron steak is a cut of meat that has only become popular in the 21st century. Through our Butcher Box subscription we have learned a method for making a delicious sous vide flat iron steak.

Flat iron steak was created as an innovation from butchers looking to use parts of the top muscle blade that was normally discarded. The problem was a tough line of sinew running through the top blade. Butchers need to cut steaks on the sinew to get a flat iron steak.
When properly prepared, flat iron steak is said to be one of the most tender and flavorful cuts of meat. However, there are only 2 to 3 pounds of flat iron per cow so flat iron steak can be expensive. I am leery of ordering flat iron at a restaurant because of some less than ideal experiences.
Recently our subscription meat service, Butcher Box, started offering flat iron steak. We have been ordering flat iron steaks from Butcher Box and have been impressed with the results.
I found a recipe for a pineapple marinade on the Butcher Box site. I adopted this for grapefruit juice, one of our favorite meat marinades.
This is a very standard sous vide steak recipe. Flat iron is a small cut of meat so it is easy to overcook. Sous vide ensures it reaches the proper temperature.
Once it comes out of the sous vide bath it is finished with a quick sear on the grill at high heat. IT only takes about 2 minutes per side to get a nice sear.
Sous Vide Flat Iron Steak
Ingredients
- 4 flat iron steaks about 6 ounces each
- 1/3 cup grapefruit juice
- 1/3 cup olive oil
- 2 Tbsp lemon juice
- 1 Tbsp soy sauce
- 1 Tbsp ginger minced
- 1 Tbsp garlic minced
- 1 Tbsp brown sugar
- 1 Tbsp kosher salt
- 1 tsp black pepper
Instructions
- Combine marinade ingredients in a bowl. Add steak, cover and marinate steaks in refrigerator for an hour.
- Heat sous vide bath to 125 degrees for medium rare, 130 for medium or 135 for medium-well done. Add steak and cook at least 1 hour, but no more than 4 hours.
- Heat grill or skillet to high. Remove steaks from sous vide bath and pat dry. Sear steaks on grill for about 2 minutes per side. Slice steaks across grain to serve.
