Ultimate Mashed Potatoes Recipe
Mashed potatoes are an essential side dish for many meals. Mashed potatoes seem easy to make. However, there is big difference between ordinary mashed potatoes and great mashed potatoes. This is our Ultimate Mashed Potatoes Recipe.
We use Russet potatoes for mashed potatoes and that seems to be a common consensus. We try and cut them into fairly equal sizes for even cooking. We add them to the cold water and then bring them to a boil. Twenty minutes seems to be the best time but they may need to go a little longer. Just make sure not to overcook them.
The main secret to mashed potatoes is the amount of butter, milk and salt. In our Ultimate Mashed Potatoes Recipe we have a pretty good idea of how much to add, but we stress that you should add it slowly and taste as you go.
A key with butter and milk is to make sure it is warmed slightly in the microwave so it better incorporates. The milk and butter is then added in batches.
Many recipes for mashed potatoes call for a potato ricer. This gives you very smooth mashed potatoes which many people love. However, our family finds these potatoes too smooth. In our mind Ultimate Mashed Potatoes should have some texture. This article from Fine Cooking perfectly defines the issue between potato ricers and mashers.
We have gone through many ricers and potato mashers over the years but have now settled on our Rosle waffle shaped potato masher. This is a fairly expensive tool but it is essential for us to get the type of ultimate mashed potatoes we love.
If you don’t want to invest in a Rosle, we suggest that you stick with an old-fashioned waffle shape potato masher. There are many crazy shaped potato mashers we have tried. We have been happy with all of them
